An easy weeknight meal idea for the entire family! These savory Mexican style Picadillo stuffed poblano peppers with ground beef are flavorful, filling and sure to be a crowd-pleaser.
Ingredient List
- 1 lb ground beef (at least 80% lean)
- 1 box Mezco™ Picadillo Flavor Duo Sauce and Spice & Herb Blend
- Water, as called for on box
- Potatoes, as called for on box
- 6 medium poblano chiles
- 1 1/4 cups shredded queso Oaxaca or mozzarella cheese
- Fresh cilantro, if desired
Preparation
- Heat oven to 425°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- Cook beef and potatoes as directed on box.
- Cut open one side of each chile; remove seeds. Arrange chiles in baking dish; divide beef mixture among chiles, about 1/2 cup each.
- Cover with foil; bake 30 to 35 minutes or until chiles are tender and filling is heated through. Remove foil; top with cheese. Bake uncovered 4 to 5 minutes or until cheese is melted. Top with cilantro just before serving.
Tips
- Queso Oaxaca is a quick-melting cheese, perfect for topping these stuffed peppers. If you are unable to find Queso Oaxaca, shredded mozzarella cheese is a good substitute.
- Poblano chile peppers are flavorful but not spicy. They will soften as they bake, making them tender and delicious.
- Picadillo is a traditional Latin American dish that starts with a ground meat mixture cooked in spiced tomato sauce and varies slightly from country to country. It can also be served with cooked rice, tacos or as an empanada filling.
- Green beans are a great option to dish up alongside your peppers, or if you’re looking for a bigger meal, this recipe will go perfectly alongside some Mexican-style street corn! Why not even add a dollop of sour cream for some added tanginess?
